Beans Florentine
Ingredients
- 1 onion, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- 1 tsp garlic, minced
- 1/2 cup water
- 3-15 ounce cans white beans
- 1 cup vegetable broth
- 1 tbsp soy sauce
- 1 tsp dried basil
- 1 tsp dried oregano
- 2 cups fresh spinach, chopped
- freshly ground pepper to taste
Directions
Place the onion, celery, carrot, and garlic in a large pot with the water. Cook, stirring occasionally, for 5 minutes. Add the beans, broth, soy sauce, basil, oregano, and pepper. Cook over low heat for 20 minutes. Add the spinach and cook for 3 minutes longer. Serve over grains, potatoes, toast, or English muffins.Prep: 10 minutes Cook: 30 minutes
